Every grain
is a promise.

We select, process and inspect
our rice to guarantee purity, stability and consistent yield for those who transform it, cook it,
distribute it and bring it to the table.

Quality is not checked at the end.
It is managed at every stage.

From paddy rice to packaging, every step reduces the gap between what we want to achieve and what reaches the customer.

From variety to performance.

Sushi rice is not born from a commercial recipe, but from a chain of custody: seed, field, processing, inspection, distribution and feedback.

Same rigour
different uses.

Whether it is home cooking, Michelin-starred catering, green building or the food industry, our rice mill works to minimise uncertainty. Shapes and applications change, but the stability of our supply and the precision of our method remain the parameters on which to build your value.

First you understand it, then
you truly savour it.

The rice mill is the place where the promise becomes visible: you see how it is born, you measure how it is processed, you understand why the result changes.

Whether it is home cooking, Michelin-starred catering, green building or the food industry, our rice mill works to minimise uncertainty. Shapes and applications change, but the stability of our supply and the precision of our method remain the parameters on which to build your value.

1

Selection

of raw materials

Paddy rice is selected at the source based on physical, varietal and end-use parameters. It is not about “cleaning” a raw material to make it suitable for processing, but about understanding what that grain will need to do after processing. For this reason, variety, origin, homogeneity, maturation and expected behaviour are linked to the standard required by the customer or the product line.

2

Cleaning

Cleaning prepares the paddy rice for the actual processing. Aspirators, cleaners and separation systems remove foreign bodies and materials inconsistent with the batch, adapting the intervention to the actual variability of each harvest. It is the first concrete safeguard of the promise: before processing the grain, we reduce what could generate instability in the process.

3

Husking

Husking separates the husk from the grain and must do so without turning the mechanical action into breakage, cracking or loss of homogeneity. Huskers, paddy separators and green grain separators allow us to manage the transition from paddy rice to brown rice, also separating residual paddy and grains that have not matured correctly. This is where the integrity, specific weight and uniformity of the batch are built.

4

Whitening

Whitening takes place in several steps because the degree of processing affects colour, fat content, whiteness index, temperature and grain integrity. Satake technologies allow for progressive and adjustable processing, especially useful when the rice must maintain precise performance: bite, whiteness, shine, low breakage and constant behaviour in the kitchen or in industrial transformation.

5

Optical selection

Optical selection transforms inspection into visible proof. Bühler sorters work with software recipes dedicated to the type of rice and processing, intercepting colour defects, impurities and irregularities. X-rays detect foreign bodies and, in particular, glass. Rejects are monitored and recipes updated over time: it is not a cosmetic step but a technical finishing phase that protects the stability, cleanliness and reliability of the batch.

6

Packaging

and traceability

The final batch is always traceable back to the origin of the paddy rice, the processing and the inspections carried out. After the finishing and product safety phases, the sample is analysed according to the required specifications and the release is documented. Traceability is not a label: it is the ability to reconstruct the journey of the rice, from the incoming batch to delivery, and to give the customer a verifiable basis on which to work.

METHOD

to leave
nothing to chance.

Rice is not checked at the end of the process. It is managed at every stage. From the paddy rice to the final packaging, every step is designed to reduce the gap between what is intended and what is achieved. The final result must be able to meet the standard for every context of use: the grain does not lie.

GRAINS

are not all the same.

Every supply is designed for a specific use. From varieties for fine dining to by-products for the technical industry, we guarantee physical and constant characteristics. Because the difference between a good product and a reliable one lies in what does not happen.

Grains selected for cooking resistance, controlled absorption and precise creaminess. Each variety responds to a defined technical profile.

Come and discover how the method makes the difference.

What happens before the rice is ready for use? What determines its quality?
And how much does the territory matter?

These and other questions will be answered in a tailor-made tour dedicated to families, groups, companies and delegations: to understand how a standard that leaves nothing to chance is born.

Our supply chain reaches right
to your home.

Choose your favourite varieties on our online shop and bring them to the table: each one is the result of a method that leaves nothing to chance.
