Cohesion, whiteness, stability.
Sushi rice as a supply chain
project.

Sushi rice requires consistent performance: fragrance, appropriate amylose content, uniform specific gravity, resistance to stress, the right degree of whiteness, and a low tendency to crack. Value is created through the chain of custody: seed, field, harvest, drying, processing, distribution, and feedback.

Suitable for

The food industry and ready-meal producers, specialised distributors, sushi catering, and professional kitchens requiring consistent performance.

Characteristics

The rice maintains cohesion after cooking, with an appropriate and stable amylose content. Specific gravity, degree of whiteness, and grain integrity are uniform. Minimising broken or cracked grains is a primary objective of the supply chain and processing, verifiable through parameters agreed upon with the client.

How we achieve it

The result is built throughout the entire chain of custody: seed selection, cultivation, harvesting, drying, storage, and processing. In the rice mill, we regulate whitening and polishing to limit physical and thermal stress, separate broken grains, apply dedicated optical sorting recipes, and inspect the batch before release. Upon request, fat content, whiteness index, and cracking percentage can also be verified.
